The Caker on Vulcan Lane

I'm excited to announce that The Caker now has a presence on upper Vulcan Lane! Our friend Ruben who owns the amazing bagel and coffee shop 'Vulcan Lane Bagels' is letting us share his cute as hell hole in the wall, so that customers can order whole Caker cakes directly from there (by filling out a wee order form), and of course his cabinets will be filled with mini Caker cakes. Make sure you swing by Monday-Friday from 7am - 3pm for your coffee fix, lunch fix and afternoon sweet treat fix!

RECIPE FOR MY FAVOURITE VEGAN, GLUTEN FREE AND REFINED SUGAR FREE PEANUT BUTTER COOKIES


These cookies are insanely good, ridiculously easy to make, not overly sweet and generally pretty good for you. They keep really well in an air tight container for up to 2 weeks.

Ingredients:
1 cup organic peanut butter, crunchy or smooth 
1 cup pitted dates (softened in boiling water for 5 minutes)
2 tbs maple syrup
2 tsp vanilla extract
1 tsp baking soda
400g ground almonds
2 tsp ground cinnamon 
sea salt for sprinkling

Preheat the oven to 160°C, and line two baking trays with baking paper.
Blend all ingredients in a food processor until mostly smooth and a malleable dough is reached. You can adjust the amount of ground almonds or maple syrup to make it the right consistency to roll.
Using your hands, form small balls and place them on to the baking paper.
Using a fork press down on each ball to flatten slightly. Sprinkle with sea salt.
Place in to the oven and bake for 12-15 minutes or until golden. Leave to cool completely as they will be fragile to move when still warm.

Makes around 30 cookies.

JUNK FREE JUNE

I'm excited to be part of a cool initiative to help raise money for The Cancer Society…it's called Junk Free June and I'm opting to cut out potato chips (my biggest weakness) for the month of June. I am one of several amazing ambassadors who you can support by visiting www.junkfreejune.org.nz.

Junk Free June is a not-for-profit organisation founded by the Cancer Society of New Zealand (CSNZ). After months of planning, collaboration with key partners and creative development, Junk Free June was born. Our team is made up of both Cancer Society staff and digital, design, creative, marketing and PR professionals. Junk Free June is essentially an independent charity that is owned by the Cancer Society of NZ.

There’s a lot of charity events that fill our calendar each year so the challenge for us was “how do we make Junk Free June stand-out from the crowd?” We realised that charitable donators are very rarely given tangible rewards for their contributions so we thought “why don’t we try use a prize model to help us stand out?”. We challenge participants to fundraise whilst eating healthy and we reward them for it!

What we eat and drink may cause around 30 percent of cancers in industrialised countries - making diet second only to tobacco as, in theory, a preventable cause of cancer. No particular foods or eating patterns are guaranteed to prevent cancer; however, some foods and eating patterns can reduce your risk. For healthy adults we recommend that you eat a diet that is mostly from vegetables and fruits, be physically active, and maintain a healthy body weight.

Check out this beautiful collaboration between THE CAKER and MARKANTONIA featured on Styled Canvas. I couldn't be more pleased with the photos by Neeve Woodward, who captures one of our wedding cakes in all its simplicity, adorned with Antonia's dried flower arrangements. Not only is Antonia a true artist, but the loveliest, sweetest soul I've ever met.

Things I've made this week...

3 meters of bench space is life changing!
These mixed cake boxes have been selling so well! I'm thinking of offering them 2 or 3 days a week from now on, for those less organised than the rest.

We made 600 Anzac biscuits which were handed out at The Department Store and Top Shop. Our version looked a little rustic, but were made with Lewis Road Creamery butter and Billington's unrefined muscovado sugar to make them taste extra special.

We have lots of Mother's Day treats on offer here at The Caker. We can make up all sorts of gift packages with our cake mixes, @ceresorganics coconut oil and coconut milk, tea towels, books, spatulas, and of course the lovely Mother's Bouquet tea from @harneyandsons_tea..it's a blend of chamomile, rose, cornflower and orange rind.
