Amy's wedding at Mantells

I made another array of small cakes, as opposed to the big traditional tiered wedding cake, for Amy and Jason's wedding. She looks SO beautiful!! Photos by Jo Currie (www.jocurrie.com).

Wedding buffet

For Jen's wedding she wanted an array of cakes rather than one big one. I really likes this idea of a 'cake buffet' because it means everyone gets to try something different and they look pretty special all laid out together. The cake for the bride and groom's table was an amaretto cake with honey mascarpone filling and fresh nectarines. All photos were taken by Jel Photo (www.jelphoto.co.nz).

Mr Greggles cake

This cake was ordered for a boss who apparently was not going to be too pleased when he opened the box to see a pink cake with 'Mr Greggles' written on it

The best vegan coconut cake

Today I made the most delicious smelling coconut cake which you would never guess was vegan. Not only is it reasonably healthy and low fat but it has a really lovely texture and flavour, despite containing no eggs or butter. The trick was to use this beautiful 100% pure coconut oil I bought - it's full of good fats and has a subtle coconuty character. I topped it with a vegan butter cream and some toasted coconut. I will definitely be making this cake again so feel free to order one.
Ingredients:

flour
organic vanilla infused sugar
baking powder
salt
coconut oil
coconut extract
organic vanilla extract
organic soy milk
shredded coconut

icing:

non-hydrogenated vegetable margarine
organic vanilla extract
icing sugar

It's wedding season!

I love making wedding cakes and this month I'm doing 10 of them. It's such an honour to be involved in someone's special day in this way. In the future I think I'd like to specialise in making wedding cakes; it's a real art form and I would do all sorts of crazy things. For now though, I choose to cater for non-traditional small weddings, and make 2 or 3 tiered cakes. I steer well clear of marzipan icing because nobody likes that anyway. My motto here is I want to make wedding cakes that taste incredible rather than looking inedible.
