Happy halloween everyone! Today I made loads of spooky ginger cookies for the lovely team at Fresh PR for them to gift to some of their clients.

This video should make your day.

Easy Peasy Banana Cake

The boys at U Live asked me to share my simplest banana cake recipe. It's a winner and even the least capable baker could make one with no trouble.

125g butter
3/4 cup sugar
1 large organic egg
2 large ripe fair trade bananas, mashed
1 1/2 cups of flour
1 heaped teaspoon baking powder
1 teaspoon cinnamon
1/4 cup whole milk
1 cup pitted dates and / or walnuts (optional but yummy!)

Preheat oven to 180 degrees C and line a 23cm cake tin with baking paper. Cream together butter and sugar until pale and fluffy. Add egg followed by mashed banana. Gradually add flour and cinnamon alternating with the milk. Add dates and / or walnuts if desired. Put in the oven for 40 minutes or until golden and firm to the touch.

Serve warm with cream!

I used a white chocolate cream cheese icing, but something chocolatey would go really well too and if you have time, some caramelised banana slices would be lovely served on top.

Cakes and Diamonds

Today I made cakes and cookies to celebrate Jessica McCormack's latest diamond range. The gathering was at Mollies in Hernebay (my favourite place ever) and they served beautiful rosé with my cakes. I made a fig and raspberry cake, a gluten free orange and almond cake, a lemon cake with rose water syrup and some little spice cookies. It certainly was an evening of indulgence.

Old Scool Baking

I'm dedicating all of my spare time this week to cake research. And that means delving into the olden days when baking was the tradition of Edwardian high tea was in full swing. I love all this stuff. Sophia Coppola's Marie Antoinette film was such a feast for my eyes; I can watch the opulent tea party scenes over and over again and never get bored.

Anastasia's cat cake

She and her boyfriend love cats, so why not order a cat cake!

Yesterday I went to Wellington

It was a freezing, windy and rainy day in Wellington, but that gave me all the more reason to visit lots of cake shops and have numerous cups of tea. I had black dorris plums with bircher muesli for breakfast, high tea at Martha's pantry, rabbit ravioli at Matterhorn for lunch and popped into Moore Wilson's (NZ's answer to Dean and Deluca) for a nosey. It's a cute little city and I'll definitely be going back!
