I made this 2 tier wedding cake for a lovely Brazilian couple that got married in the weekend. It's a fig and walnut cake with white chocolate cream cheese icing, decorated with freeze dried raspberries and icing sugar roses. I really love making wedding cakes and have done about 8 in the past, but have never made anything too 'traditional'. I think it's more important for a cake to taste amazing that to look practically inedible with a thick layer of marzipan icing. All cakes should taste and look real. That's my motto!
I also make 3 tier wedding cakes of any flavour desired, usually for weddings of up to 80 guests (price to be negotiated).

Stolen Girlfriends Club are collaborating with Walker and Hall and asked me to make some cakes for the event. The jewellery line is called 'Heavy Metal' and it's pretty tough and chunky, incorporating lots of skulls and crossbones and hearts engraved with 'I love you to death.' The cakes to match are a little bit cutesie and a little bit rugged.

On my recent trip to NYC, the most notable cake that I ate was a giant slice of peanut butter and jelly cake from a beautiful bakery in NoLita. I've been waiting for the perfect opportunity to recreate my own version, so when a customer specifically requested to order one, I thought why not?! This cake is a really light vanilla cake with chopped nuts throughout it. The peanut butter fluffy frosting is pretty delicious if I can say so myself (even if it's not quite as appealing for the waste line).

This is another take on my infamous gluten free, flourless dark chocolate cake. It's the same rich, dense, moist cake (made with 80% cocoa chocolate) topped with a chocolate cream cheese icing and crushed amaretti cookies. I love these things. They're sugary, crunchy almond flavoured treats that go so well with the smoothness of the chocolate cake.
