Lemony Lavender and Almond Cake


I was recently commissioned to make this lavender and almond cake for my friend Natalie's birthday. It's the perfect cake for someone like her - delicate, sweet and a bit unique. I got the recipe off one of my favourite food blogs - Trotski & Ash, and decided not to adapt it in any way because it's already so perfect in it's simplicity. 

It may not look super special, but the flavour of this cake is lovely. The hand made lavender syrup adds a dainty floral note which goes beautifully with the lemon zest. It's moist and soft like a frangipane cake and needs nothing more than a humble sprinkling of icing sugar to finish it off.

Ingredients:

butter
sugar
organic vanilla extract
organic eggs
flour
ground almonds
zest and juice of lemons
fresh lavender blossoms

Peanut Butter and Jelly Cake

Today in New York I went to a beautiful little bakery in Nolita called Little Cupcake Bakeshop. They had a whole array of cupcakes with mounds of frosting (but I have a real aversion to the whole cupcake fad), so instead I bought a massive slice of peanut butter and jelly cake. They wrapped it up and put it in a special 'to go' box in exchange for $5. It was pretty full on but very very yummy.

I made some cakes for the launch of the collaboration between these 2 amazing brands which was held at their Newmarket store. They gave me a beautiful set of lingerie in return for some flourless dark chocolate cakes which they cut into finger sized rectangles for the guests to nibble on.

I'm off to New York City

I leave for New York in a few days! While it's primarily a holiday, it will definitely serve as a research trip too. I'm going to visit some of the world's best bakeries, talk to expert patissiers and do a whole lot of taste testing. Keep an eye on my site for photos and reviews of places I visit. 
More importantly, I won't be taking orders until the 23rd of May. However, I decided it would be a good idea to teach my sister Anouk how to make my gluten free flourless dark chocolate cake as it's by far the best seller.  If you'd like to order one while I'm away please email her at anoukrondel@gmail.com. She has access to the commercial kitchen I use so should be able to fulfill orders with a few days' notice.
