Valentine's Day Special - Red Velvet Cake

There's something very special about this dramatic looking American classic; the multi layer red-chocolate cake with a white chocolate cream cheese icing. It is really just a Devil's Food Cake (so called because it's so rich and delicious that it must be sinful) with red food coloring added to it. The cake has a mild chocolate flavor due to the addition of cocoa powder with a moist and tender crumb that'll make you want to eat the entire thing. Perfect for a Valentine's treat don't you think?

Ingredients

butter
sugar
organic eggs
red food colouring
Valhrona cocoa powder 
flour
milk
organic vanilla extract
salt
bi-card soda
white vinegar

Frosting:
cream cheese
white chocolate
butter

Chili Chocolate cake (gluten free)

For this week's cake, I decided to put a twist on my gluten free flourless dark chocolate cake by adding some dried chillies. We all know how well chocolate and chili go together, and in cake form it's pretty special. I dried my own red chillies then ground them, seeds and all, and added a decent amount to my chocolate mixture for an unexpected kick!

'Honey I'm Home Cake' – Honey Cake with Honey Vanilla Buttercream and Sticky Almonds

This sophisticated and toothsome layer cake is infused with the essence of honey and topped with a generous layer of buttercream and a cluster of caramelised almonds. Delish. The recipe is inspired by a cake called 'Aunt Sassy Cake' in an amazing book I got for Christmas called Baked Explorations, Classic American Desserts Reinvented. It's super simple with a limited number of ingredients, which I think is the key to a good cake. When you just need a sweet treat with your afternoon tea, this cake is ideal and the dainty flavour of honey that comes through is rather lovely.

Ingredients:

butter
brown sugar
manuka honey
condensed milk
organic eggs
vanilla extract
flour

Buttercream:

icing sugar
butter
vanilla extract
honey

Sticky almonds:
sliced almonds
icing sugar
butter
milk
orange zest

High Fashion Cupcakes

These fashion cupcakes were shot by Swedish photographer Therese Aldgard and styled by Lisa Edsalv. I think they're are a bit ridiculous and surely won't taste as good as they look, but no doubt they will be an enormous hit. The idea has inspired me to create a 'cake look book,' which will be a collection of images of my best cakes styled in different ways to reflect the demeanor of each one. Big things are ahead for 2011!
