Easy Peasy Banana Cake

The boys at U Live asked me to share my simplest banana cake recipe. It's a winner and even the least capable baker could make one with no trouble. 


125g butter
3/4 cup sugar
1 large organic egg
2 large ripe fair trade bananas, mashed
1 1/2 cups of flour
1 heaped teaspoon baking powder
1 teaspoon cinnamon
1/4 cup whole milk
1 cup pitted dates and / or walnuts (optional but yummy!)


Preheat oven to 180 degrees C and line a 23cm cake tin with baking paper. Cream together butter and sugar until pale and fluffy. Add egg followed by mashed banana. Gradually add flour and cinnamon alternating with the milk. Add dates and / or walnuts if desired. Put in the oven for 40 minutes or until golden and firm to the touch. 

Serve warm with cream!

I used a white chocolate cream cheese icing, but something chocolatey would go really well too and if you have time, some caramelised banana slices would be lovely served on top.
