I've had a few requests for vegan cakes lately so thought it was high time I let go of my fears of making one and just give it a go. I found this recipe for a chocolate and orange cake with the help of my friend Bonnie who is in transit to becoming a vegan. She swears by it and it's no surprise. Who would've thought a fat free cake with no eggs, butter or milk could be so delicious? It's moist and rich and oh so virtuously healthy.

This cake gets its flavour from the delicious traditional Indian spiced tea, masala chai. To make the latte, which is poured into the cake mixture, I infused some chai tea bags in sweetened hot milk and added cinnamon, ginger, cardamom, cloves and even some fresh black pepper. The result is a delicate, spicy and rather unusual tasting cake. To top it off, condensed milk is used to make a sticky glaze.
Also comes in cupcake form.
