'Plush Plum Cake' - Wild Plum, Walnut and White Chocolate Cake.


Mmmmm I love plums when they're crimson red, tart and juicy. At the moment they're so abundant so I decided to make a plum puree and try to integrate it into a cake somehow. Well I think it worked out. This plum, walnut and white chocolate cake is pretty much my own invention. I made the spicy, nutty batter then swirled the velvety plums through it barely mixing it in. I haven't cut the cake yet as I'm saving it for a dinner party tonight but I'm hoping that each slice has visible red ripples of sweet yet sour plum through it. Topped with a layer of the puree and a peppering of white chocolate buttons, I think this cake is a bit of a charmer. 


Ingredients:

organic flour
sugar
organic eggs
milk
cinnamon
all spice
nutmeg
organic walnuts
pureed dark plums
white chocolate buttons

The Perilous Cake - Flourless Chocolate Cake


Since I was away for Valentine's Day, I thought I'd better make up for it by baking something this week that is all about chocolate. This cake is dangerous. It contains a lot of chocolate so I used the very best quality Valrhona to ensure the very best taste. The full-bodied batter produced a rather flat yet delicate and light cake. It stays soft in the middle and when warmed becomes almost molten. Being so rich, you only need a small slice so beware! 


Ingredients

Valrhona dark chocolate
butter
organic eggs
sugar
ground almonds

Fancy Friands


Friands are little French tea cakes that make a nice alternative to the conventional cupcake. They are buttery yet light and made with ground almonds and icing sugar to give them a refined, moist quality. The traditional French way is to simply add almond extract, but I like to add all sorts of different things like fruits and chocolate. Today for The Tea Room cafe I made some gluten free apricot and some pear and dark chocolate friands. They look their best when golden around the edges, dusted with icing sugar and served with an espresso.


Ingredients:
organic buckwheat flour
icing sugar
ground almonds
organic egg whites
vanilla extract
butter
apricot halves
honey belle pears
organic dark chocolate

'Coco Cake' - Gluten Free Coconut and Banana Cakes


I adapted this slightly unusual but seriously delicious recipe from 'La Tartine Gourmand'. These cakes are divine. The banana makes them moist and sweet while the coconut and buckwheat flour lend an exotic little something extra. I like to garnish with extra coconut, some chocolate shavings and a drizzling of caramel. These wee gluten free gems can be sourced at The Tea Room Cafe and Coco's Cantina this week.

Muscovado sugar
grated coconut
organic ground almonds
organic buckwheat flour
butter
coconut milk
bananas
baking powder
baking soda
Maldon salt

'The Ultimate Cake' - Carrot and Walnut Cake


CARROT AND WALNUT CAKE

Who doesn't love a good carrot cake? It is hands down one of my favourite cakes of all time. Not too rich or sweet, this carrot cake tastes wholesome and healthy. It is packed with spices and nuts and only a small amount of oil. A generous layer of clementine icing flecked with coconut flakes is the perfect marriage for this cake. Serve with a chai latte and enjoy.
